Ingredients

  • 2 cups raw almonds
  • 2 tablespoons unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract optional

Instructions

Preheat the Oven

  • Set your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Almonds

  • Place almonds in a mixing bowl. Pour melted butter over them. Mix well to coat evenly.

Add Sugar and Cinnamon

  • Sprinkle sugar, cinnamon, and salt over almonds. Add vanilla if using. Stir until almonds are fully coated.

Spread on Baking Sheet

  • Transfer almonds to the lined baking sheet. Spread them in a single layer for even roasting.

Bake the Almonds

  • Roast in preheated oven for 8–10 minutes. Stir halfway to prevent burning. Watch closely—they roast fast.

Cool and Serve

  • Remove from oven. Let almonds cool on the baking sheet. They become crispier as they cool.

Store for Later

  • Once cool, store in an airtight container. They stay fresh for up to 2 weeks.

Notes

  • Use brown sugar instead of granulated sugar for a deeper flavor.
  • Add a pinch of cayenne for a sweet and spicy twist.
  • Try other nuts like pecans or cashews using the same method.
  • Make them vegan by using coconut oil instead of butter.
  • Sprinkle a little sea salt after roasting for a sweet-salty taste.
