Ingredients
  

  • cups red lentils
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 carrot chopped
  • 1 potato chopped
  • 1 tomato chopped
  • 2 tablespoons olive oil
  • teaspoons curry powder
  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can coconut milk 400 ml
  • 3 cups water or vegetable broth
  • 1 tablespoon lemon juice
  • Fresh cilantro for garnish optional

Instructions
 

Rinse the Lentils

  • Wash lentils with clean water. Rinse until water becomes clear.

Heat the Oil

  • Place pot on medium heat. Add olive oil and heat gently.

Cook Onion

  • Add chopped onion. Cook until soft and light golden.

Add Garlic and Ginger

  • Add garlic and ginger. Stir and cook for one minute.

Add Vegetables

  • Add carrot, potato and tomato. Stir and cook for three minutes.

Add Spices

  • Add curry powder, cumin, turmeric, salt and pepper. Mix well.

Add Lentils

  • Add rinsed lentils. Stir gently to coat with spices.

Add Liquids

  • Pour coconut milk and water into the pot. Mix well.

Bring to Boil

  • Bring soup to a gentle boil on medium heat.

Simmer the Soup

  • Reduce heat to low. Cover and simmer for 25 minutes.

Stir Occasionally

  • Stir sometimes to stop sticking and burning.

Check Texture

  • Lentils should be soft and soup thick.

Add Lemon Juice

  • Add lemon juice for fresh flavor. Stir gently.

Rest the Soup

  • Turn off heat. Let soup rest for five minutes.

Garnish

  • Add fresh cilantro on top if desired.

Serve Warm
