Ingredients
  

  • 4 eggs
  • 150 g feta cheese
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes optional
  • 1 teaspoon dried oregano
  • Fresh basil or parsley for garnish
  • 1 small onion sliced (optional)

Instructions
 

Preheat the oven

  • Set oven to 180°C. Lightly grease a baking dish with olive oil.

Prepare tomatoes

  • Add cherry tomatoes, garlic, onion, olive oil, salt and pepper to the dish.

Add feta cheese

  • Place feta cheese block in the center of the dish.

Season everything

  • Sprinkle oregano and chili flakes over the ingredients evenly.

Bake base mixture

  • Bake for 15 minutes until tomatoes are soft and juicy.

Add eggs

  • Remove dish and carefully crack eggs over the baked mixture.

Bake again

  • Return to oven and bake for 5 to 7 minutes until eggs are just set.

Check doneness

  • Egg whites should be cooked but yolks should remain slightly soft.

Garnish and serve

  • Add fresh basil or parsley before serving.

Serve warm

  • Serve immediately with bread or toast.
