Ingredients
  

For the Casserole:

  • 12 oz egg noodles or wide pasta
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

For the Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 cup beef broth
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon Worcestershire sauce

Optional Topping:

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs

Instructions
 

Cook Noodles

  • Boil water in a medium pot. Add salt and egg noodles. Cook until al dente, about 8–10 minutes. Drain.

Sauté Beef

  • Heat a large skillet over medium heat. Add ground beef. Cook until browned, about 5–6 minutes.

Cook Vegetables

  • Add chopped onion and garlic to beef. Sauté for 3–4 minutes until onions are soft and fragrant.

Season Beef

  • Add salt, pepper, paprika and thyme. Stir to combine and coat beef and vegetables evenly.

Make Creamy Sauce

  • In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.

Add Liquids

  • Gradually whisk in milk and beef broth. Cook until sauce thickens, about 3–4 minutes.

Add Cheese & Worcestershire

  • Stir in shredded cheddar and Worcestershire sauce until smooth. Remove from heat.

Combine Noodles & Sauce

  • In a large mixing bowl, combine cooked noodles, sautéed beef mixture, vegetables and creamy sauce. Mix gently.

Transfer to Baking Dish

  • Pour mixture into a greased 9x13 inch baking dish. Spread evenly with a spatula.

Add Topping

  • Sprinkle extra cheddar cheese and breadcrumbs over casserole. Bake in preheated oven at 350°F (175°C) for 20–25 minutes.

Serve

  • Remove from oven. Let cool slightly before serving. Scoop into bowls or plates. Enjoy warm.

Notes

  • Use rotini or penne instead of egg noodles if desired.
  • Swap ground beef with ground turkey for a lighter version.
  • Add mushrooms or bell peppers for extra vegetables.
  • Use mozzarella cheese for a milder flavor.
  • Make it spicy by adding a pinch of cayenne or red pepper flakes.
  • Make ahead by assembling and refrigerating for up to 24 hours before baking.
  • Top with crushed crackers instead of breadcrumbs for extra crunch.
