Ingredients
  

For the Beer Brine

  • 2 bottles light beer
  • 6 cups water
  • cup kosher salt
  • ¼ cup brown sugar
  • 4 garlic cloves smashed
  • 1 tablespoon black peppercorns
  • 2 bay leaves
  • 1 tablespoon fresh thyme

For the Chicken

  • 1 whole chicken about 5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 lemon halved
  • Fresh rosemary sprigs
  • Fresh thyme sprigs

Instructions
 

Prepare the Brine

  • Add beer, water, salt, brown sugar, garlic, thyme, peppercorns and bay leaves into a large stockpot. Stir until dissolved completely.

Cool the Brine

  • Place the brine inside the refrigerator until fully chilled. Cold brine keeps the chicken safe and fresh during soaking.

Brine the Chicken

  • Submerge the whole chicken into the cold brine. Cover and refrigerate for at least eight hours or overnight.

Remove the Chicken

  • Take the chicken out from the brine. Pat completely dry using paper towels for crispy roasted skin later.

Preheat the Oven

  • Set the oven to 425 degrees Fahrenheit. Allow the oven to fully heat before placing the chicken inside.

Season the Chicken

  • Rub olive oil all over the chicken. Sprinkle paprika, garlic powder, salt and black pepper evenly on every side.

Stuff the Chicken

  • Place lemon halves, rosemary, and thyme inside the chicken cavity. This adds fresh aroma and flavor while roasting beautifully.

Tie the Legs

  • Use kitchen twine to tie the chicken legs together. This helps the chicken cook evenly and keeps shape nicely.

Roast the Chicken

  • Place chicken into the roasting pan breast-side up. Roast for about one hour and twenty minutes until golden brown.

Baste During Cooking

  • Spoon pan juices over the chicken every twenty minutes. Basting keeps the meat juicy and flavorful during roasting time.

Check the Temperature

  • Insert a meat thermometer into the thickest chicken part. Internal temperature should reach 165 degrees Fahrenheit before serving safely.

Rest and Serve

  • Let the chicken rest fifteen minutes before carving. This helps juices stay inside and keeps the meat tender.
