Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beer lager or ale works best
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon mustard powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: chopped chives for garnish
  • Pretzels chips, or vegetables for serving

Instructions
 

Make a roux

  • Melt butter in a medium saucepan over medium heat. Add flour and stir for one minute until combined.

Add beer slowly

  • Pour in beer gradually while whisking to avoid lumps. Heat until slightly thickened.

Add cream

  • Pour in heavy cream slowly while stirring constantly to create a smooth, creamy base.

Add spices

  • Stir in garlic powder, smoked paprika, mustard powder, salt and black pepper. Mix evenly.

Melt cheese

  • Gradually add shredded cheddar. Stir constantly until fully melted and smooth.

Check consistency

  • If dip is too thick, add a little more beer or cream to reach desired texture.

Taste and adjust

  • Taste dip. Adjust salt, pepper or spices to your preference for balanced flavor.

Keep warm

  • Keep the dip on low heat if serving immediately. Stir occasionally to maintain smoothness.

Transfer to serving bowl

  • Pour dip into a serving bowl. Optional: sprinkle chopped chives or paprika on top for presentation.

Serve with dippers

  • Serve hot with pretzels, crackers, chips or raw vegetables. Perfect for parties or snack time.

Optional topping
