Ingredients
  

  • 2 lbs beef chuck or short ribs cut into chunks
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 2 dried pasilla chilies
  • 4 cloves garlic
  • 1 medium onion chopped
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Fresh cilantro and lime wedges for garnish
  • Corn tortillas for serving

Instructions
 

Prepare the dried chilies

  • Remove stems and seeds from dried chilies. Toast lightly in a dry skillet for one minute for flavor.

Soak the chilies

  • Place toasted chilies in hot water for 15 minutes until soft. Drain and set aside.

Make chile sauce

  • Blend soaked chilies, garlic, onion, cumin, oregano, paprika and vinegar with a little beef broth until smooth.

Sear the meat

  • Heat oil in Dutch oven over medium-high heat. Sear beef chunks until browned on all sides for flavor.

Combine meat and sauce

  • Pour chile sauce over seared meat in the pot. Stir to coat meat evenly.

Add beef broth

  • Pour remaining beef broth into pot. Stir gently to combine sauce and broth with meat.

Simmer slowly

  • Cover pot and reduce heat to low. Simmer for 2.5–3 hours until meat is tender and falls apart.

Taste and season

  • Check seasoning and add more salt or pepper if needed. Adjust vinegar for brightness.

Shred the meat

  • Remove meat from sauce. Shred with two forks for tacos or bowls.

Strain the sauce

  • Optional: Strain chile sauce for smoother texture. Return sauce to pot to keep warm.

Serve birria

  • Place shredded meat in bowls or tortillas. Ladle sauce on top or serve as dip.

Garnish

  • Sprinkle fresh cilantro and squeeze lime wedges over meat for freshness and extra flavor.
