Ingredients
  

For the chocolate sponge:

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups sugar
  • teaspoons baking powder
  • teaspoons baking soda
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup hot water
  • 1 teaspoon vanilla extract

For the filling and topping:

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • cups cherry pie filling
  • ½ cup cherry syrup or juice
  • Chocolate shavings for garnish
  • Fresh cherries for decoration

Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C or 350°F. Grease and line two round cake pans with parchment paper.

Mix Dry Ingredients

  • In a large bowl, sift flour, cocoa powder, baking powder and baking soda. Add sugar and mix well.

Add Wet Ingredients

  • Add milk, oil, eggs and vanilla extract. Beat until smooth and combined. Do not overmix.

Add Hot Water

  • Slowly pour hot water into the batter. Mix gently until the batter becomes smooth and slightly thin.

Bake the Cakes

  • Divide batter evenly between pans. Bake for 30 to 35 minutes until a toothpick comes out clean.

Cool Completely

  • Remove cakes from oven. Let them cool in pans for 10 minutes. Transfer to rack to cool fully.

Whip the Cream

  • In a cold bowl, beat heavy cream, powdered sugar and vanilla. Beat until soft peaks form.

Slice the Layers

  • Use a sharp knife to slice each cake into two layers. You will have four layers total.

Add Cherry Syrup

  • Brush each cake layer with cherry syrup. This keeps the cake moist and flavorful.

Add Cream and Cherries

  • Spread whipped cream over the first layer. Add cherry filling evenly on top.

Stack the Layers

  • Place the next layer on top. Repeat syrup, cream and cherries for each layer.

Frost the Cake

  • Cover the entire cake with whipped cream. Smooth the sides and top evenly.

Decorate the Cake

  • Add chocolate shavings on the sides. Place fresh cherries on top for decoration.

Chill Before Serving

  • Refrigerate the cake for at least one hour before slicing. This helps layers set nicely.

  • Use cake flour for softer texture.
