  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 cups chicken broth
  • 1 tablespoon olive oil

Instructions

Soak the Beans

  • Put the dried beans in a bowl. Cover them with water. Soak them overnight so they get soft.

Heat the Oil

  • Warm olive oil in a big pot on medium heat.

Cook the Onion

  • Add the chopped onion. Stir and cook until the onion becomes soft and light brown.

Add Carrots and Celery

  • Add the carrots and celery. Stir and cook until the vegetables become soft.

Add Garlic

  • Add the garlic. Stir for 30 seconds so the smell comes out.

Add Ham

  • Add the chopped ham. Stir well to mix it with the vegetables.

Add Beans

  • Drain the soaked beans. Add them to the pot and stir everything together.

Add Broth

  • Pour in the chicken broth. Make sure the beans are fully covered.

Add Seasonings

  • Add the bay leaf, salt, and pepper. Stir gently.

Simmer the Soup

  • Cover the pot. Cook on low heat for 1 hour 30 minutes until the beans are very soft.

Stir and Check

  • Open the pot. Stir gently. Taste the soup. Add more salt or pepper if needed.

Remove Bay Leaf

  • Take out the bay leaf. Do not eat it.

Notes

  • Mash a few beans to make the soup creamier.
  • Add smoked ham or smoked turkey for a stronger smoky flavor.
  • Add a little apple cider vinegar for extra flavor.
  • For thicker soup, cook uncovered for 10 more minutes.
  • You can use canned beans to save time. Cook for only 25 minutes.
