Ingredients

  • 3 ripe bananas mashed
  • 1/2 cup unsalted butter melted
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup chopped walnuts
  • 2 tablespoons milk

Instructions

Preheat the Oven

  • Preheat oven to 350°F (175°C). Grease a loaf pan lightly with butter or cooking spray.

Mash the Bananas

  • Place ripe bananas in a bowl. Mash them with a fork until smooth and creamy.

Mix Wet Ingredients

  • Add melted butter, brown sugar, eggs, vanilla extract and milk. Whisk until mixture becomes smooth and well combined.

Combine Dry Ingredients

  • In another bowl, mix flour, baking soda, salt and cinnamon. Stir until evenly blended.

Mix Batter

  • Slowly add dry ingredients to wet mixture. Stir gently with a spatula until combined. Avoid overmixing.

Add the Nuts

  • Fold chopped walnuts into the batter. Mix gently so nuts spread evenly throughout the mixture.

Pour Into Pan

  • Pour batter into the prepared loaf pan. Spread the top evenly with a spatula.

Bake the Bread

  • Bake for 50–55 minutes until golden brown. A toothpick inserted in the center should come out clean.

Cool the Bread

  • Remove bread from oven. Let it cool in the pan for 10 minutes before transferring to a cooling rack.

Slice and Serve

  • Slice the banana nut bread and serve warm or at room temperature.

Notes

  • Use very ripe bananas with brown spots for best sweetness.
  • Toast walnuts before adding for stronger flavor.
  • Add chocolate chips for a sweeter version.
  • Use pecans instead of walnuts if preferred.
  • Add a little nutmeg for deeper spice flavor.
  • Do not overbake to keep bread moist.
