Ingredients
  

For the Salad:

  • 2 heads romaine lettuce chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup croutons

For the Dressing:

  • 2 cloves garlic minced
  • 2 anchovy fillets mashed (or 1 teaspoon anchovy paste)
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1/3 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

For Homemade Croutons (Optional):

  • 2 cups bread cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt to taste

Instructions
 

Prepare Croutons (Optional)

  • Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, and salt. Bake for 8–10 minutes until golden and crisp.

Make Dressing

  • In a bowl, whisk garlic, anchovy, Dijon mustard and lemon juice.

Add Olive Oil

  • Slowly drizzle in olive oil while whisking until smooth.

Add Cheese and Season

  • Stir in Parmesan cheese. Season with salt and black pepper.

Prepare Lettuce

  • Wash and dry romaine lettuce well. Chop into bite-sized pieces.

Toss Salad

  • In a large bowl, combine lettuce, croutons and dressing. Toss gently.

Add Parmesan

  • Sprinkle extra Parmesan cheese on top.

Serve

  • Serve immediately for best freshness and crunch.
