  • 2 pounds chicken thighs

  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil

Instructions
 

Prepare the Chicken

  • Pat chicken thighs dry with paper towels carefully. Dry chicken browns better and creates richer flavor while cooking evenly.

Heat the Oil

  • Place a large skillet over medium heat. Add vegetable oil and allow it to become hot before cooking chicken.

Brown the Chicken

  • Add chicken thighs into the skillet carefully. Cook each side until golden brown and slightly crispy on the outside.

Remove the Chicken

  • Transfer browned chicken onto a plate temporarily. Keep the flavorful juices inside the skillet for the sauce later.

Cook Onion and Garlic

  • Add sliced onion into the skillet. Cook until soft, then stir in garlic and cook for another minute gently.

Add the Sauce Ingredients

  • Pour soy sauce, vinegar, and chicken broth into the skillet. Add bay leaves, peppercorns, brown sugar, and sesame oil.

Return the Chicken

  • Place chicken thighs back into the sauce carefully. Spoon some sauce over the chicken so flavors coat every piece.

Simmer Slowly

  • Cover the skillet loosely and simmer gently for thirty minutes. The chicken will become tender and absorb delicious flavor.

Reduce the Sauce

  • Remove the lid and cook for ten more minutes. The sauce should thicken slightly and become rich and glossy.

Serve and Enjoy

  • Serve the chicken hot over steamed rice. Garnish with sliced green onions for extra freshness and color before eating.
