Ingredients
  

  • 6 fresh corn ears
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 red bell pepper roasted and chopped
  • 4 cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 small jalapeño chopped
  • 1 tablespoon lime juice
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped cilantro
  • ½ cup shredded cheddar cheese
  • 2 slices cooked bacon chopped

Instructions
 

Prepare the Corn

  • Remove husks from the corn. Cut the kernels carefully using a sharp knife. Keep the corn kernels in a bowl.

Roast the Corn

  • Heat one tablespoon olive oil in a skillet. Roast half the corn kernels until slightly golden and smoky.

Cook the Onion

  • Melt butter in a large soup pot. Add chopped onion and cook until soft and lightly golden.

Add Garlic and Jalapeño

  • Add minced garlic and chopped jalapeño. Stir for one minute until the mixture smells rich and flavorful.

Add Bell Pepper
