Ingredients

For the Dough

  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold butter cubed
  • 1 egg
  • ½ cup cold water

For the Filling

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup tomato sauce
  • ¼ cup green olives chopped
  • 2 tablespoons fresh cilantro

For Assembly

  • 1 egg beaten for egg wash

Instructions

Prepare the Dough

  • Add flour and salt into a large bowl. Mix together before adding cold butter pieces evenly throughout the flour.

Cut in the Butter

  • Use fingers or pastry cutter to mix butter into flour. The mixture should look crumbly and slightly sandy.

Add Wet Ingredients

  • Whisk egg and cold water together. Slowly pour into flour mixture and stir until dough forms gently together.

Chill the Dough

  • Shape dough into a ball and wrap tightly. Refrigerate for thirty minutes to create flaky empanada pastry texture.

Cook the Onion

  • Heat olive oil inside a skillet over medium heat. Cook chopped onions until soft and lightly golden in color.

Add Garlic and Beef

  • Stir garlic into the skillet briefly. Add ground beef and cook until browned while breaking meat into small pieces.

Add Seasonings

  • Mix cumin, paprika, chili powder, salt and pepper into the beef. Stir evenly for bold and rich flavor development.

Add Tomato Sauce

  • Pour tomato sauce into the skillet carefully. Simmer the filling for several minutes until thick and flavorful throughout completely.

Add Olives and Cilantro

  • Mix chopped olives and cilantro into the filling. Let the mixture cool slightly before filling the empanada dough later.

Roll the Dough

  • Roll chilled dough on a floured surface. Cut into circles using a bowl or large cookie cutter carefully.

Fill the Empanadas

  • Place filling into the center of each dough circle. Fold over and press edges tightly using a fork securely.

Bake Until Golden

  • Brush empanadas with egg wash. Bake at 400 degrees Fahrenheit until golden brown and crispy for about twenty-five minutes.

Notes

  • Use shredded chicken instead of ground beef.
  • Add cheese for creamy filling.
  • Fry empanadas instead of baking for extra crunch.
  • Use store-bought dough for quicker preparation.
  • Add jalapeños for spicy flavor.
  • Chill the filling before stuffing the dough.
  • Serve with salsa or sour cream.
  • Freeze uncooked empanadas for later meals.
