Ingredients
  

  • 2 cups short-grain rice
  • 1/2 pound shrimp peeled
  • 1/2 pound mussels cleaned
  • 1/2 pound chicken thighs cut pieces
  • 1/2 cup chorizo sliced
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 4 cups chicken broth
  • 1/2 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped
  • Lemon wedges

Instructions
 

  • Preheat the Grill
  • Preheat your grill to medium heat. Place the paella pan on the grill to heat evenly before cooking starts.

Cook the Chicken

  • Add olive oil to the pan. Cook chicken pieces until browned. Remove and set aside for later use.

Cook the Chorizo

  • Add sliced chorizo to the pan. Cook until slightly crispy. Remove and keep with the chicken pieces.

Sauté Vegetables

  • Add onions, garlic and bell peppers. Cook until soft and fragrant. Stir gently to avoid burning on the grill.

Add Rice and Spices

  • Add rice to the pan. Stir lightly. Add saffron and smoked paprika. Mix well so rice absorbs all flavors.

Pour Broth

  • Slowly add chicken broth. Spread rice evenly. Do not stir after this step to create proper texture.

Add Meat Back

  • Place chicken and chorizo back into the pan. Spread evenly over the rice mixture for even cooking.

Add Seafood

  • Place shrimp and mussels on top. Close grill lid and cook until seafood is fully cooked and tender.

Let It Cook

  • Cook for about 20 minutes. Rice should absorb liquid. Bottom layer becomes slightly crispy and flavorful.

Garnish and Serve

  • Remove from grill. Sprinkle fresh parsley and add lemon wedges. Let rest for few minutes before serving.

  • Use vegetable broth for a lighter taste
  • Add clams or squid for more seafood variety
  • Use brown rice for healthier option
  • Do not stir rice after adding broth
