Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 egg yolk
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • Extra flour for dusting
  • Water if needed

Instructions

Prepare the Flour

  • Place flour on a clean surface. Make a large well in the center for the eggs and oil mixture.

Add the Wet Ingredients

  • Crack eggs and egg yolk into the center. Add olive oil and salt carefully before mixing everything together.

Mix the Dough

  • Use a fork to slowly mix flour into eggs. Continue mixing until rough dough starts forming on surface.

Knead the Dough

  • Knead dough for ten minutes until smooth and elastic. Add little water only if dough feels too dry.

Rest the Dough

  • Wrap dough tightly with plastic wrap. Let it rest for thirty minutes at room temperature before rolling.

Divide the Dough

  • Cut dough into smaller pieces. This makes rolling easier and helps create evenly thin pasta sheets later.

Roll the Dough

  • Use rolling pin or pasta machine to roll dough very thin. Dust flour lightly to prevent sticking everywhere.

Shape the Pasta

  • Cut dough into fettuccine, tagliatelle or desired shapes carefully using sharp knife or pasta machine cutter attachment.

Boil Water

  • Fill large pot with water and add salt. Bring water to rolling boil before cooking fresh pasta carefully.

Cook the Pasta

  • Cook fresh pasta for two to four minutes only. Fresh pasta cooks much faster than dried packaged pasta.

Drain Carefully

  • Drain pasta gently without overcooking. Save little pasta water because it helps create silky sauce texture later.

Serve Immediately

  • Toss hot pasta with favorite sauce. Serve immediately with cheese, herbs, or olive oil for best flavor experience.

Notes

  • Use Italian “00” flour for softer pasta texture.
  • Resting dough improves elasticity and rolling.
  • Dust extra flour lightly to avoid dry pasta.
  • Spinach puree creates beautiful green pasta dough.
  • Add black pepper for extra flavor.
  • Use beet puree for colorful pink pasta.
  • Do not overcook fresh pasta.
  • Homemade pasta tastes best fresh and warm.
  • Use semolina flour for firmer texture.
  • Pair pasta with creamy or tomato sauces.
