Ingredients

  • 2 cups long grain rice
  • 400 g chicken breast diced
  • 300 g shrimp peeled and cleaned
  • 200 g smoked sausage sliced
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 2 cups chicken broth
  • 1 cup crushed tomatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried thyme
  • 1 tsp oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

Prepare the Ingredients

  • Wash rice well until water runs clear. Chop vegetables and meat into small pieces. Keep everything ready before starting cooking process.

Cook the Sausage

  • Heat oil in a large pot over medium heat. Add sausage slices and cook until browned and slightly crispy. Remove and set aside.

Cook the Chicken

  • In the same pot, add chicken pieces. Cook until golden brown on all sides. This adds deep flavor to the base.

Sauté Vegetables

  • Add onion, bell pepper and celery into the pot. Cook until soft and fragrant. Stir often to avoid burning the vegetables.

Add Garlic and Spices

  • Add minced garlic and all spices. Cook for one minute. This helps release aroma and makes the dish more flavorful.

Add Tomatoes and Broth

  • Pour crushed tomatoes and chicken broth into the pot. Stir well to combine all ingredients evenly and create a rich base.

Add Rice

  • Add washed rice into the pot. Mix everything gently. Make sure rice is fully covered with liquid for even cooking.

Simmer the Dish

  • Cover the pot and cook on low heat for 20 minutes. Do not stir too much. Let the rice absorb all flavors slowly.

Add Shrimp

  • Add shrimp in the last 5 minutes of cooking. Cook until shrimp turn pink and tender. Avoid overcooking them.

Combine and Rest

  • Return sausage to the pot. Mix gently. Turn off heat and let it rest for 5 minutes before serving for best texture.

Notes

  • Use brown rice for a healthier version
  • Add more cayenne for extra spice
  • Replace chicken with turkey if preferred
  • Try adding okra for authentic taste
  • Use seafood broth for richer flavor
  • Do not overcook shrimp to keep them juicy
  • Let the dish rest before serving for better texture
