Instructions
 

Preheat the Oven

  • Preheat your oven to 400°F (200°C). This temperature helps potatoes roast evenly and develop crispy golden edges while keeping inside soft.

Prepare the Potatoes

  • Wash potatoes well. Cut them into thick wedges or large cubes. Similar sizes help them cook evenly.

Mix the Flavor Base

  • In a bowl, combine olive oil, lemon juice, minced garlic, chicken broth, oregano, salt and black pepper. Stir well.

Coat the Potatoes

  • Add potatoes to the bowl. Toss them gently until every piece is coated with the lemon garlic mixture.

Arrange in Baking Dish

  • Spread potatoes in a single layer in the baking dish. Avoid overcrowding so they roast properly.

Pour Remaining Sauce

  • Pour any remaining lemon mixture over the potatoes. This helps them absorb extra flavor while roasting.

Start Roasting

  • Place the baking dish in the oven. Roast for 20 minutes until potatoes start becoming tender.

Turn the Potatoes

  • Remove the dish carefully. Turn the potatoes with a spatula so all sides cook evenly.

Continue Roasting

  • Return to the oven. Roast another 20 minutes until potatoes become golden brown and crispy.

Garnish and Serve
