Ingredients
  

  • 1 whole turkey 10–12 pounds
  • 1/2 cup unsalted butter softened
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh sage chopped
  • Salt to taste
  • Black pepper to taste
  • 1 lemon halved
  • 1 onion quartered

Instructions
 

Preheat Oven

  • Preheat oven to 325°F (165°C). Prepare a roasting pan with a rack if available.

Prepare Turkey

  • Remove giblets from turkey. Pat turkey dry with paper towels for crispy skin.

Season Butter

  • Mix butter, olive oil, garlic, rosemary, thyme, sage, salt and pepper in a bowl.

Apply Butter Mixture

  • Rub butter mixture all over turkey, including under the skin for extra flavor.

Stuff Turkey

  • Place lemon halves and onion inside the cavity to add moisture and aroma.

Place in Pan

  • Put turkey breast-side up on rack in roasting pan. Tie legs if needed.

Roast Turkey

  • Roast for about 2 to 2.5 hours. Baste every 30 minutes for a golden finish.

Check Doneness

  • Use thermometer. Internal temperature should reach 165°F (74°C) in thickest part.

Rest Before Carving

  • Remove turkey and let rest 15–20 minutes. This keeps juices inside the meat.
