Ingredients
  

  • 1 whole leg of lamb about 2–2.5 kg
  • 4 tablespoons olive oil
  • 6 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions
 

Prepare the lamb

  • Pat the lamb dry with paper towels. Make small cuts all over to help the marinade absorb better.

Make the marinade

  • Mix olive oil, garlic, rosemary, thyme, lemon juice, paprika, salt and pepper in a bowl until well combined.

Marinate the lamb

  • Rub the marinade all over the lamb. Cover and refrigerate for at least two hours for better flavor.

Preheat the oven

  • Set your oven to 180°C or 350°F. Place the lamb in a roasting pan before cooking.

Start roasting

  • Put the lamb in the oven. Roast uncovered for about 60 minutes, allowing the outside to brown nicely.

Check temperature

  • Use a meat thermometer. Cook until internal temperature reaches desired doneness for your preference.

Continue roasting

  • If needed, roast for another 20–30 minutes. This ensures the meat becomes tender and fully cooked.
