Ingredients
  

  • 1 whole chicken spatchcocked or 4 chicken halves
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary chopped
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Prepare Chicken

  • Pat chicken dry and flatten (spatchcock if whole).

Make Marinade

  • In a bowl, mix olive oil, rosemary, garlic, lemon juice, salt and pepper.

Marinate Chicken

  • Rub mixture all over chicken. Let sit for at least 30 minutes.

Preheat Grill

  • Heat grill to medium-high heat. Oil grates lightly.

Grill with Brick

  • Place chicken skin-side down on grill. Put foil-wrapped brick on top. Cook for 12–15 minutes.

Flip Chicken

  • Remove brick, flip chicken and cook another 10–15 minutes until fully cooked.

Rest & Serve

  • Let chicken rest for 5 minutes before serving.

  • Wrap brick in foil for safety and cleanliness
  • Use cast iron skillet as weight if no brick
  • Add thyme or oregano for more herbs
