Ingredients
  

  • 2 cups cooked rice preferably day-old
  • 2 large eggs
  • 1 small onion chopped
  • 1 small carrot diced
  • ½ cup peas fresh or frozen
  • 2 tablespoons oil vegetable or sesame
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions chopped for garnish
  • Optional: cooked bacon ham or sausage

Instructions
 

Heat the Oil

  • Place a skillet or wok over medium-high heat. Add oil and let it warm for one minute.

Cook the Eggs

  • Beat eggs in a bowl. Pour into skillet and scramble quickly. Remove and set aside.

Sauté Onion and Carrot

  • Add onion and carrot to the skillet. Stir-fry for 3 minutes until slightly soft.

Add Peas

  • Add peas and continue stir-frying for 2 minutes. Keep vegetables crisp but tender.

Add Rice

  • Add day-old rice to skillet. Break up clumps with spatula and mix evenly with vegetables.

Season the Rice

  • Add soy sauce, sesame oil, salt and pepper. Stir well to coat all rice evenly.

Add Eggs Back

  • Return scrambled eggs to skillet. Mix gently with rice and vegetables until combined.

Optional Protein

  • If using bacon, ham, or sausage, add now. Stir-fry for another minute until heated.

Taste and Adjust

  • Taste the rice. Add extra soy sauce or seasoning if needed.

Garnish and Serve

  • Transfer to a plate. Garnish with chopped green onions. Serve hot for breakfast or brunch.

Notes

  • Use cold, day-old rice for best texture.
  • Add chopped bell peppers or mushrooms for extra flavor.
  • For spicier version, add chili flakes or sriracha.
  • Substitute soy sauce with tamari for gluten-free option.
  • Add leftover cooked meat or tofu for protein boost.
