Ingredients

  • 1 large butternut squash
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Fresh parsley for garnish
  • Pumpkin seeds for topping

Instructions

Prepare the Squash

  • Peel the butternut squash carefully. Remove seeds and cut into medium-sized cubes for faster roasting and blending later.

Roast the Squash

  • Place squash cubes on a baking tray. Drizzle olive oil over them and roast at 400°F until tender.

Cook the Onion

  • Heat olive oil in a large pot. Add chopped onion and cook gently until soft and lightly golden colored.

Add the Garlic

  • Add minced garlic into the pot. Stir for one minute until fragrant and flavorful without burning the garlic pieces.

Add the Roasted Squash

  • Transfer roasted squash into the pot carefully. Stir everything together so the onion and garlic coat the squash nicely.

Pour the Broth

  • Add vegetable broth slowly into the pot. Stir well and bring the soup mixture to a gentle simmer.

Season the Soup

  • Add salt, black pepper, cinnamon and nutmeg. Mix well so the spices spread evenly throughout the warm soup.

Blend Until Smooth

  • Use a blender or immersion blender carefully. Blend the soup until creamy, smooth, and free from large chunks completely.

Add the Cream

  • Pour heavy cream into the soup slowly. Stir gently until fully combined and creamy throughout the pot evenly.

Simmer the Soup

  • Cook the soup for five more minutes. This helps all flavors combine beautifully before serving warm bowls to everyone.

Garnish and Serve

  • Pour soup into serving bowls carefully. Top with parsley and pumpkin seeds for extra flavor and crunchy texture.

Notes

  • Roast squash longer for deeper flavor.
  • Add carrots for extra sweetness.
  • Use coconut milk instead of cream.
  • Add chili flakes for spicy flavor.
  • Blend carefully while soup stays hot.
  • Use chicken broth for richer taste.
  • Add crispy bacon pieces before serving.
  • Fresh herbs improve the overall flavor.
  • Serve with toasted bread or crackers.
  • Store leftovers properly for fresh taste.
