  • 12 ounces smoked sausage sliced
  • 1 pound chicken breast diced
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 1 1/2 cups long grain rice
  • 3 cups chicken broth
  • 1 can diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/2 pound shrimp peeled and deveined
  • Chopped parsley for garnish

Instructions
 

Heat the Oil

  • Heat olive oil in a large pot over medium heat until hot but not smoking.

Brown the Sausage

  • Add sliced sausage and cook until browned. Stir often to release smoky flavor.

Cook the Chicken

  • Add diced chicken. Cook until lightly golden and no longer pink.

Add Vegetables

  • Stir in onion, peppers, and celery. Cook until soft and fragrant.

Add Garlic and Spices

  • Add garlic, Cajun seasoning, paprika, thyme, pepper, and salt. Stir well to coat evenly.

Add Rice

  • Pour in rice and stir for one minute. This helps rice absorb flavors.

Add Liquids

  • Add chicken broth and diced tomatoes with juices. Stir gently to combine.

Bring to Boil

  • Bring mixture to a gentle boil. Reduce heat to low immediately.

Simmer Covered

  • Cover pot and simmer for 25 minutes until rice is tender.

Add Shrimp

  • Stir in shrimp. Cover again and cook five minutes until shrimp turns pink.

Rest the Dish

  • Turn off heat and let jambalaya rest for five minutes before serving.

Garnish and Serve

  • Fluff rice gently. Garnish with parsley and serve hot.
