Ingredients
  

  • 4 slices of bread sourdough or white bread works best
  • 4 slices fresh mozzarella cheese
  • 1 medium ripe tomato sliced
  • Fresh basil leaves
  • 2 tablespoons butter softened
  • 1 tablespoon pesto optional but recommended
  • Salt a small pinch
  • Black pepper a small pinch

Instructions
 

Prepare the bread

  • Spread softened butter evenly on one side of each bread slice. This helps create a crispy golden crust.

Heat the pan

  • Place a non-stick pan on low to medium heat. Let it warm gently before adding the sandwich.

Assemble the base

  • Place one bread slice in the pan, butter side down. Add mozzarella cheese on top.

Add tomatoes

  • Layer tomato slices over the cheese. Sprinkle a small pinch of salt and black pepper.

Add basil and pesto

  • Place fresh basil leaves over tomatoes. Spread a thin layer of pesto if using.

Add more cheese

  • Place another slice of mozzarella on top. This helps hold the sandwich together.

Close the sandwich

  • Cover with another bread slice, butter side facing up. Press gently with a spatula.

Cook slowly

  • Cook for 3 to 4 minutes until the bottom bread turns golden brown.

Flip carefully

  • Flip the sandwich gently. Cook the other side until crispy and cheese fully melts.

Rest and serve

  • Remove from pan. Let it rest for one minute, then cut diagonally and serve warm.
