Ingredients
  

  • 10 cups popped popcorn about ½ cup unpopped kernels
  • 1 cup unsalted butter 2 sticks
  • 2 cups brown sugar packed
  • ½ cup light corn syrup
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda

Instructions
 

Preheat Oven

  • Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.

Pop the Popcorn

  • Pop popcorn using an air popper or stovetop method. Remove unpopped kernels. Place in a large mixing bowl.

Melt Butter

  • In a saucepan, melt butter over medium heat until fully liquid. Stir continuously to prevent browning.

Add Sugar and Syrup

  • Add brown sugar, corn syrup, and salt to melted butter. Stir well until smooth.

Boil Caramel

  • Bring mixture to a boil over medium heat. Stir constantly for 4-5 minutes to avoid burning.

Remove from Heat

  • Take the caramel off the stove. Let it sit for 1-2 minutes. Add vanilla and baking soda. Stir well.

Coat Popcorn

  • Pour caramel over popcorn. Use a spatula to stir and coat each piece evenly.

Bake Popcorn

  • Spread coated popcorn on parchment-lined baking sheet. Bake in preheated oven for 45 minutes.

Stir Occasionally

  • Every 15 minutes, stir popcorn gently to coat evenly and prevent clumping.

Cool Completely

  • Remove popcorn from oven. Let cool completely. Caramel hardens as it cools.

Break into Pieces

  • Once cooled, break popcorn into clusters. Serve immediately or store in an airtight container.
