  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 small flour tortillas
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ cup sour cream
  • Fresh cilantro for garnish

Prepare the Oven

  • Preheat your oven to 375°F. Lightly grease a baking dish with oil to prevent sticking.

Heat the Oil

  • Place a skillet on medium heat. Add olive oil and let it warm for one minute.

Cook the Onion

  • Add chopped onion to the skillet. Cook until soft and lightly golden, stirring often.

Add Garlic

  • Add minced garlic to the onion. Cook for thirty seconds until fragrant, not burnt.

Season the Chicken

  • Add shredded chicken to the skillet. Sprinkle salt, pepper, paprika, and cumin evenly.

Add Sauce

Add Sour Cream

Add Cheese

Roll the Enchiladas

Add Remaining Sauce
