Ingredients
  

  • 4 medium zucchini
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup cherry tomatoes chopped
  • ¼ cup chopped onions
  • 2 cloves garlic minced
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions
 

Preheat the Oven

  • Set your oven to 375°F (190°C). This helps the zucchini cook evenly.

Prepare the Zucchini

  • Wash zucchini. Slice them in half lengthwise. Scoop out seeds to make space for filling.

Cook the Vegetables

  • Heat olive oil in a pan. Sauté onions, garlic, and tomatoes for five minutes.

Season the Filling

  • Add salt, pepper, and Italian seasoning to the cooked vegetables. Stir well for even flavor.

Fill the Zucchini Boats

  • Spoon the vegetable mixture into zucchini halves. Press lightly so it stays inside.

Add the Cheese

  • Sprinkle mozzarella and Parmesan cheese on top of each zucchini boat. Cover the filling completely.

Bake in the Oven
