Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs
  • 2 cups cooked rice white, brown, or jasmine
  • 2 cups Alfredo sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup broccoli florets optional
  • ½ teaspoon dried Italian herbs optional

Instructions
 

Prepare the Chicken

  • Cut chicken into bite-sized pieces. Season with salt, pepper and garlic powder. Set aside on a plate.

Cook the Chicken

  • Heat butter in a skillet over medium heat. Add chicken. Cook 6–8 minutes until golden and fully cooked.

Prepare the Rice

  • Cook rice according to package instructions. Fluff with a fork. Make sure rice is soft but not mushy.

Steam Broccoli

  • If using broccoli, steam for 3–4 minutes until crisp-tender. Do not overcook. Set aside.

Mix Alfredo Sauce

  • In a medium bowl, combine Alfredo sauce and Parmesan cheese. Stir until smooth and creamy.

Preheat Oven

  • Preheat oven to 375°F (190°C). Grease a large baking dish lightly with butter or cooking spray.

Layer the Casserole

  • Spread half of the cooked rice in the baking dish. Add chicken pieces evenly over rice.

Add Broccoli

  • Scatter steamed broccoli over chicken layer. This adds color and extra nutrients.

Pour Alfredo Sauce

  • Pour the Alfredo mixture evenly over the rice, chicken and broccoli. Use a spoon to coat all layers.

Add Cheese Topping

  • Sprinkle shredded mozzarella on top. Optional Italian herbs add flavor and aroma.

Bake the Casserole

  • Place in preheated oven. Bake for 20–25 minutes until bubbly and cheese melts golden brown.

Cool Slightly

  • Remove casserole from oven. Let it rest 5 minutes before serving. This helps layers set.
