Ingredients
  

  • 2 cups cooked chicken breast sliced or shredded
  • 2 nectarines sliced thin
  • 1 large cucumber sliced
  • 2 tablespoons red onion thinly sliced
  • 2 tablespoons fresh mint or basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions
 

Prepare Ingredients

  • Slice nectarines and cucumber. Shred or slice cooked chicken into bite-sized pieces.

Make Dressing

  • In a small bowl, whisk olive oil, lemon juice, honey, salt and pepper.

Combine Salad
