Ingredients
  

  • 4 large bell peppers any color
  • 2 cups cooked chicken breast sliced or shredded
  • 1 tablespoon olive oil
  • 1 small onion sliced
  • 1 cup sliced bell peppers for filling
  • 2 cloves garlic minced
  • 1 tablespoon fajita seasoning
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • ½ cup cooked rice or quinoa
  • ½ cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

Preheat the Oven

  • Preheat oven to 375°F. Lightly grease a baking dish and set it aside.

Prepare the Bell Peppers

  • Cut tops off bell peppers. Remove seeds and membranes carefully. Place peppers upright in baking dish.

Heat the Skillet

  • Heat olive oil in a large skillet over medium heat until warm.

Cook Onion and Peppers

  • Add sliced onion and bell peppers. Cook until soft and lightly golden.

Add Garlic and Spices

  • Add garlic, fajita seasoning, paprika, cumin, salt, and pepper. Stir until fragrant.

Add the Chicken

  • Add cooked chicken to the skillet. Stir well to coat with spices evenly.

Add Rice

  • Mix in cooked rice or quinoa. Stir until everything is well combined.

Stuff the Peppers

  • Spoon chicken fajita mixture into each bell pepper. Press gently to fill fully.

Add Cheese

  • Sprinkle shredded cheese on top of each stuffed pepper evenly.

Bake the Peppers

  • Cover dish with foil. Bake for 20 minutes until peppers are tender.

Uncover and Finish

  • Remove foil and bake for 10 more minutes. Cheese should be melted and bubbly.

Garnish and Serve

  • Remove from oven. Garnish with cilantro and serve with lime wedges.
