  • Boneless chicken cut into bite-sized pieces
  • Cornflour
  • All-purpose flour
  • Ginger garlic paste
  • Fresh garlic finely chopped
  • Soy sauce
  • Red chili sauce
  • Tomato ketchup
  • Vinegar
  • Onion sliced
  • Green bell pepper sliced
  • Spring onions chopped
  • Black pepper powder
  • Salt
  • Sugar

Instructions
 

Marinate the Chicken

  • Add chicken to a bowl. Mix cornflour, all-purpose flour, salt, pepper, and ginger garlic paste. Coat evenly and rest ten minutes.

Fry the Chicken

  • Heat oil in a pan. Fry chicken pieces on medium heat until golden and cooked. Remove and keep aside.

Prepare Garlic Oil

  • Heat two tablespoons oil in a wok. Add chopped garlic and sauté slowly until aromatic and lightly golden.

Add Onions and Peppers

  • Add sliced onions and bell peppers. Stir fry on high heat for two minutes to keep them crunchy.

Make the Sauce Base

  • Add soy sauce, chili sauce, ketchup, vinegar, sugar, salt, and pepper. Mix well and cook briefly.

Thicken the Sauce

  • Add water or stock and bring to a boil. Mix cornflour with water and add slowly to thicken.

Add Fried Chicken

  • Add fried chicken pieces into the sauce. Toss gently until chicken is fully coated with garlic sauce.

Final Garnish

  • Add chopped spring onions. Mix once and turn off heat. Serve hot for best flavor.
