Ingredients
  

  • 250 grams ground chicken or pork
  • 1 cup finely chopped napa cabbage
  • 2 green onions finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger minced
  • 1 clove garlic minced
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Black pepper to taste
  • 30 to 35 dumpling wrappers
  • Water for sealing

Instructions
 

Prepare the cabbage

  • Chop the napa cabbage very finely. Sprinkle salt lightly. Let it rest for ten minutes. Squeeze out extra water gently.

Mix the filling

  • Add meat, cabbage, green onions, ginger, and garlic to a bowl. Mix slowly in one direction until combined well.

Season the mixture

  • Pour soy sauce, sesame oil, and vegetable oil into the bowl. Add pepper and salt. Mix until sticky and smooth.

Prepare wrappers

  • Place dumpling wrappers on a clean surface. Cover them with a damp cloth to prevent drying.

Fill the dumplings

  • Place one spoon of filling in the center of each wrapper. Do not overfill them.

Seal the dumplings

  • Dip your finger in water. Moisten wrapper edges. Fold and pinch firmly to seal tightly.

Rest before cooking

  • Place sealed dumplings on a tray. Let them rest for five minutes before cooking.

Boil method option

  • Bring water to a gentle boil. Add dumplings carefully. Stir once to prevent sticking.

Cook until done

  • Cook dumplings until they float. Let them cook two more minutes. Remove with slotted spoon.

Pan-fry method option

  • Heat oil in a pan. Add dumplings flat side down. Cook until bottoms turn golden brown.

Steam finish

  • Add water to the pan. Cover quickly. Steam dumplings until water evaporates fully.

Serve hot

  • Remove dumplings carefully. Serve hot with dipping sauce on the side.
