Ingredients
  

  • 2 chicken breasts boneless and skinless
  • 1 cup long-grain rice
  • 1 cup black beans cooked or canned
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime juiced
  • 1/4 cup fresh cilantro chopped
  • Optional toppings: shredded cheese sour cream, salsa, avocado

Instructions
 

Prepare the Chicken

  • Mix paprika, cumin, chili powder, salt, and pepper. Rub all over chicken breasts.

Cook the Chicken

  • Heat olive oil in a skillet over medium heat. Cook chicken 6–7 minutes each side.

Rest the Chicken

  • Remove chicken and let it rest 5 minutes. Slice thinly before serving.

Cook the Rice

  • Boil 1 cup rice in 2 cups water. Cover and simmer 15 minutes until soft. Fluff with fork.

Sauté Vegetables

  • Heat 1 tbsp olive oil in a pan. Add bell peppers, onion, garlic. Cook 5 minutes until soft.

Heat the Beans and Corn

  • In a small pan, warm black beans and corn. Add pinch of salt and pepper. Mix well.

Assemble the Bowl

  • Place rice as base in a bowl. Add chicken slices on top. Layer with beans, corn, and vegetables.
