Ingredients
  

  • 200 grams digestive biscuits or graham crackers
  • 100 grams melted butter
  • 300 grams cream cheese softened
  • 200 grams dark chocolate chopped
  • 100 grams sugar
  • 2 large eggs
  • 100 ml heavy cream
  • Zest of 1 large orange
  • 2 tablespoons fresh orange juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Crush the Biscuits

  • Place biscuits in a food processor. Blend until fine crumbs form. You can also crush them using a rolling pin.

Mix with Butter

  • Add melted butter to the crumbs. Mix well until it looks like wet sand and sticks together easily.

Press the Base

  • Press the crumb mixture into the bottom of the springform pan. Use a spoon to flatten evenly and firmly.

Chill the Crust

  • Place the pan in the fridge for 20 minutes. This helps the base become firm and stable.

Melt the Chocolate

  • Put chopped chocolate in a heatproof bowl. Melt gently over simmering water. Stir until smooth and glossy.

Beat the Cream Cheese

  • In a large bowl, beat softened cream cheese until smooth. Make sure there are no lumps left.

Add Sugar and Salt

  • Add sugar and a pinch of salt. Beat again until the mixture becomes creamy and well combined.

Add Eggs

  • Add eggs one at a time. Mix slowly after each egg. Do not overbeat the batter.

Pour in Cream

  • Add heavy cream and vanilla extract. Mix gently until smooth and creamy.

Add Orange Flavor

  • Stir in fresh orange zest and orange juice. Mix carefully so the flavor spreads evenly.

Add Melted Chocolate

  • Pour melted chocolate into the batter. Fold gently with a spatula until fully combined and silky.

Preheat the Oven

  • Preheat your oven to 160°C or 320°F. Place a baking tray on the lower rack.

Pour the Filling

  • Take the crust from the fridge. Pour the cheesecake filling over the crust. Smooth the top evenly.

Bake the Cheesecake

  • Place the pan in the oven. Bake for about 50 to 55 minutes until edges are set.

Cool Slowly

  • Turn off the oven. Leave the door slightly open. Let the cheesecake cool inside for one hour.

Chill Before Serving

  • Remove from oven and cool at room temperature. Then refrigerate at least four hours before slicing.

  • Use high quality dark chocolate for rich flavor.
  • Do not skip orange zest. It gives strong natural aroma.
