Ingredients
  

For the crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter

For the cheesecake filling:

  • 3 blocks cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup melted dark chocolate

For the strawberry swirl:

  • 1 cup fresh strawberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions
 

Prepare the Pan

  • Preheat oven to 325°F or 160°C. Wrap springform pan bottom with aluminum foil tightly.

Make the Crust

  • Mix chocolate cookie crumbs with melted butter. Press mixture firmly into bottom of pan evenly.

Prebake the Crust

  • Bake crust for 10 minutes. Remove and let cool while preparing filling.

Prepare Strawberry Puree

  • Blend strawberries, sugar and lemon juice until smooth. Cook lightly for five minutes until slightly thick.

Beat Cream Cheese

  • In a large bowl, beat softened cream cheese until smooth and creamy with no lumps.

Add Sugar and Eggs

  • Add sugar and mix well. Add eggs one at a time, mixing gently after each addition.

Add Chocolate and Sour Cream

  • Stir in melted chocolate and sour cream. Mix slowly until smooth and fully combined.

Pour Filling

  • Pour chocolate cheesecake batter over cooled crust. Smooth the top evenly.

Add Strawberry Swirl

  • Drop spoonfuls of strawberry puree on top. Use knife to swirl gently into pretty patterns.

Prepare Water Bath

  • Place springform pan inside larger baking tray. Pour hot water halfway up sides carefully.

Bake the Cheesecake

  • Bake for 50 to 55 minutes. Center should slightly jiggle but not look wet.

Cool Slowly

  • Turn off oven and leave door slightly open. Let cheesecake cool inside for one hour.

Chill Completely

  • Remove from oven. Refrigerate for at least four hours or overnight for best results.

Remove from Pan
