Ingredients
  

  • 3 large leeks sliced
  • 3 medium potatoes peeled and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 5 cups vegetable or chicken stock
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme optional
  • 1 bay leaf optional
  • ½ cup milk or cream optional
  • Fresh parsley for garnish optional

Instructions
 

Clean the Leeks

  • Wash leeks well. Remove dirt and sand. Slice thinly.

Heat the Pot

  • Place pot on medium heat. Add butter and olive oil.

Cook Onion

  • Add chopped onion. Cook until soft and clear.

Add Garlic

  • Add minced garlic. Stir and cook for one minute.

Add Leeks

  • Add sliced leeks. Cook slowly until soft.

Add Potatoes

  • Add chopped potatoes. Stir gently to mix.

Season the Soup

  • Add salt, pepper, thyme and bay leaf.

Add Stock

  • Pour in stock. Stir everything well.

Boil the Soup

  • Bring soup to a gentle boil.

Simmer Gently

  • Reduce heat to low. Cover and cook 25 minutes.

Check Softness

  • Potatoes should be very soft.

Remove Bay Leaf

  • Take out bay leaf before blending.

Blend the Soup

  • Blend until smooth using blender or hand blender.

Add Milk

  • Add milk or cream if using. Stir gently.

Rest the Soup

  • Turn off heat. Let soup rest five minutes.

Garnish

  • Top with parsley if desired.

Serve Warm

  • Serve hot and enjoy the comfort.
