Ingredients
  

  • 2 cups graham cracker crumbs
  • ½ cup melted unsalted butter
  • 4 blocks cream cheese softened
  • cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs room temperature
  • 1 cup sour cream
  • ¼ cup heavy cream
  • 1 tablespoon all-purpose flour
  • Pinch of salt

Instructions
 

Prepare the Pan

  • Wrap the outside of the springform pan with foil. This prevents water from leaking during baking.

Make the Crust

  • Mix graham cracker crumbs with melted butter. Stir until combined and looks like wet sand.

Press the Crust

  • Press crumb mixture firmly into the pan bottom. Use a glass to make it even and smooth.

Bake the Crust

  • Bake crust at 350°F for ten minutes. Remove and cool while preparing the filling.

Beat the Cream Cheese

  • Add cream cheese to a bowl. Beat on low speed until smooth and creamy without lumps.

Add Sugar and Vanilla

  • Add sugar and vanilla extract. Beat gently until mixed. Do not overmix at this stage.

Add Eggs Slowly

  • Add eggs one at a time. Mix on low speed after each egg until just combined.

Add Creamy Ingredients

  • Add sour cream, heavy cream, flour, and salt. Mix slowly until smooth and creamy.

Pour the Filling

  • Pour cheesecake filling over the cooled crust. Tap pan gently to remove air bubbles.

Prepare Water Bath

  • Place pan in a baking tray. Add hot water halfway up the pan sides carefully.

Bake the Cheesecake

  • Bake at 325°F for sixty to seventy minutes. Center should jiggle slightly when done.

Cool in Oven

  • Turn off oven and crack door open. Let cheesecake cool inside for one hour.

Chill the Cheesecake

  • Remove cheesecake and cool fully. Refrigerate at least four hours or overnight before slicing.
