Ingredients
  

  • 2 pounds potatoes peeled and diced
  • 3 large eggs
  • 3/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 cup diced celery
  • 1/4 cup diced onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon chopped parsley (optional

Instructions
 

Cook the Potatoes

  • Place diced potatoes in a large pot. Cover with water and add a little salt. Boil for about 10 minutes until tender.

Cook the Eggs

  • Place eggs in a small pot with water. Boil for about 10 minutes until fully cooked and firm.

Drain and Cool

  • Drain the potatoes using a colander. Allow them to cool slightly before mixing the salad.

Peel and Chop Eggs

  • Peel the boiled eggs and chop them into small pieces. Set aside for later mixing.

Prepare the Dressing

  • In a bowl, mix mayonnaise, mustard, vinegar, salt and black pepper until smooth and creamy.

Combine the Potatoes

  • Place the warm potatoes in a large mixing bowl. Gently mash a few pieces for a creamy texture.

Add Vegetables

  • Add diced celery, onion, and sweet pickle relish to the bowl. Stir gently to combine.

Add Eggs and Dressing

  • Add chopped eggs and prepared dressing to the bowl. Mix gently until everything is coated.

Add Final Seasoning

  • Sprinkle paprika and chopped parsley over the salad. Taste and adjust salt if needed.

Chill Before Serving

  • Cover the bowl and refrigerate for at least one hour. This helps the flavors blend perfectly.
