Ingredients

  • 3 cups shredded hashbrowns fresh or frozen, thawed
  • 1 cup cooked sausage crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: red pepper flakes
  • Optional: dipping sauces like ketchup or ranch

Instructions

Cook the Sausage

  • Cook the sausage in a skillet until browned. Break it into small pieces. Drain grease and let the sausage cool completely.

Prepare the Hashbrowns

  • Place hashbrowns in a large bowl. Pat them dry with a paper towel so they turn extra crispy when baked.

Add Cheese and Sausage

  • Add cheddar cheese and cooked sausage to the hashbrowns. Mix gently until everything is evenly combined and looks colorful.

Add Eggs and Seasoning

  • Crack eggs into the bowl. Add garlic powder, onion powder, salt, and pepper. Mix well so the eggs coat all ingredients smoothly.

Shape the Bites

  • Scoop small portions of the mixture. Roll each portion into firm balls. Press slightly to shape them into small bites.

Arrange on Baking Sheet

  • Line a baking sheet with parchment paper. Place the bites evenly on the tray. Leave space so they crisp well.

Bake Until Golden

  • Bake at 400°F (200°C) for about 25 minutes. Remove when the bites look crispy and deeply golden on the outside.

Cool and Serve

  • Let the bites cool for a few minutes. Serve warm with your favorite dipping sauces for the best flavor.

Notes

  • Use thawed hashbrowns because frozen ones release water and reduce crispiness.
  • Try spicy sausage for extra flavor and a warm kick.
  • Add veggies like diced bell peppers for more color and crunch.
  • Use mozzarella or pepper jack cheese for a new taste twist.
  • Make mini bites for parties or larger ones for a full breakfast.
  • Do not skip drying hashbrowns because moisture prevents crispiness.
  • Air fry them for even crispier results.
