Ingredients
  

  • 3 lb 1.4 kg beef chuck roast
  • 1 cup beef broth
  • 1 packet Italian dressing mix or 2 tbsp homemade
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper flakes optional
  • 1/2 cup pepperoncini peppers with juice
  • 1 green bell pepper sliced
  • 6 –8 soft sandwich rolls
  • 6 –8 slices provolone or mozzarella cheese optional

Instructions
 

Prepare the Beef

  • Trim excess fat from the chuck roast. Pat it dry with paper towels for better seasoning adherence.

Season the Meat

  • Rub the beef with Italian seasoning, garlic powder, onion powder, black pepper and red pepper flakes.

Place in Crock Pot

  • Put the seasoned beef in the slow cooker. Add beef broth, pepperoncini peppers with juice and sliced bell peppers on top.

Cook the Beef

  • Cover and cook on low for 8 hours (or high for 4–5 hours) until the beef is fork-tender.

Shred the Meat

  • Remove beef from the crock pot and shred with two forks. Return shredded beef to the pot to soak in juices for extra flavor.

Prepare Sandwich Rolls

  • Slice sandwich rolls and optionally toast lightly in the oven or on a skillet.

Assemble Sandwiches

  • Pile shredded beef onto rolls. Add provolone or mozzarella slices if desired. Spoon some cooking juices over the beef.

Optional Add-ons

  • Add sautéed onions, peppers or banana peppers for extra flavor and texture. Serve immediately.

Notes

  • Use a chuck roast or brisket for tender, juicy meat.
  • Add a few tablespoons of Worcestershire sauce for deeper flavor.
  • For spicier sandwiches, include hot cherry peppers or extra red pepper flakes.
  • Serve with au jus on the side for dipping sandwiches.
  • Leftover shredded beef can be frozen for 2–3 months.
