Ingredients

  • 4 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon chili flakes optional
  • Fresh basil or parsley for garnish

Instructions

Season the chicken

  • Rub chicken breasts with salt, pepper and garlic powder. Make sure all sides are well coated for better flavor.

Sear the chicken

  • Heat olive oil in a pan. Lightly sear chicken for 2–3 minutes on each side until golden. This adds extra flavor.

Place in crock pot

  • Transfer the seared chicken into the crock pot. Arrange them evenly at the bottom.

Prepare the sauce

  • In a bowl, mix heavy cream, chicken broth, garlic, Parmesan cheese and Italian seasoning until smooth and well combined.

Add sun-dried tomatoes

  • Stir chopped sun-dried tomatoes into the sauce. This adds a tangy and rich flavor to the dish.

Pour over chicken

  • Pour the prepared sauce over the chicken in the crock pot. Make sure chicken is well covered with sauce.

Cook slowly

  • Cover and cook on low for 4 hours or until chicken is tender and fully cooked.

Check consistency

  • Stir the sauce gently. If it looks thin, cook uncovered for 15–20 minutes to thicken.

Taste and adjust

  • Taste the sauce and adjust salt, pepper or chili flakes according to your preference.

Garnish and serve

  • Sprinkle fresh basil or parsley on top. Serve warm with your favorite sides.

Notes

  • Use chicken thighs for juicier meat
  • Add mushrooms for extra flavor
  • Use half-and-half instead of heavy cream for lighter sauce
  • Add spinach at the end for nutrition
  • Serve with pasta, rice, or mashed potatoes
  • Use freshly grated Parmesan for best taste
  • Do not overcook to avoid dry chicken
  • Add a squeeze of lemon for freshness
