Ingredients
  

  • 2 pounds boneless chicken breasts
  • 3 bell peppers sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 can diced tomatoes with juice
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lime juiced
  • Fresh cilantro for garnish
  • Tortillas for serving

Instructions
 

Prepare the Vegetables

  • Wash the bell peppers carefully. Slice peppers and onions into thin strips for even cooking inside the crockpot.

Prepare the Chicken

  • Trim extra fat from chicken breasts. Pat them dry using paper towels before placing into the slow cooker.

Add Vegetables to Crockpot

  • Place sliced peppers and onions into the bottom of the crockpot. Spread them evenly across the surface carefully.

Add the Chicken

  • Lay chicken breasts over the vegetables inside the crockpot. This helps the chicken absorb all the delicious flavors.

Add Garlic and Tomatoes

  • Sprinkle minced garlic over the chicken evenly. Pour diced tomatoes with juice directly into the crockpot carefully.

Season the Chicken

Add Olive Oil
