Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 bunch asparagus trimmed
  • 6 slices bacon chopped
  • 2 shallots thinly sliced
  • 1/2 cup heavy cream
  • 2 eggs
  • 1/2 cup grated Gruyère or mozzarella cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon thyme optional
  • Fresh parsley for garnish

Instructions
 

Preheat Oven

  • Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Prepare Pastry

  • Roll out puff pastry slightly and place on the tray. Score a border around edges.

Cook Bacon

  • In a skillet, cook bacon until crispy. Remove and set aside.

Sauté Shallots

  • In the same pan, sauté shallots in a little oil until soft and slightly golden.

Make Filling

  • In a bowl, whisk eggs, cream, salt, pepper and thyme.

Assemble Tart

  • Spread sautéed shallots over pastry. Add bacon evenly. Sprinkle cheese on top.

Add Asparagus

  • Arrange asparagus spears neatly over the tart.

Pour Mixture

  • Pour egg and cream mixture gently over the filling.

Bake

  • Bake for 30–35 minutes until golden and set in the center.

Cool Slightly

  • Let the tart rest for 5 minutes before slicing.

Serve

  • Garnish with fresh parsley and serve warm.
