Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips or blueberries optional
  • 2 tablespoons sugar for topping optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or lightly grease the cups.

Mix the Dry Ingredients

  • In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Whisk everything together until evenly mixed.

Prepare the Wet Ingredients

  • In another bowl, whisk eggs, milk, vegetable oil, and vanilla extract. Mix until smooth and well combined.

Combine Wet and Dry Ingredients

  • Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined.

Add Optional Mix-ins

  • Fold chocolate chips or blueberries into the batter. Mix lightly so they spread evenly without overmixing.

Fill the Muffin Cups

  • Spoon the batter into the prepared muffin tin. Fill each cup about three quarters full.

Add Sugar Topping

  • Sprinkle a little sugar on top of each muffin. This creates a light sweet crust when baked.

Bake the Muffins

  • Place the muffin tin in the oven. Bake for about 18 minutes until golden and a toothpick comes out clean.

Cool the Muffins

  • Remove muffins from the oven. Let them cool in the pan for five minutes.

Transfer to Cooling Rack

  • Move muffins to a wire rack. Let them cool completely before serving for the best texture.
