Ingredients

For the dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • ¾ cup warm water

For frying:

  • Oil for deep frying

For Cunza topping:

  • 3 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh rosemary chopped
  • ¼ teaspoon salt

Instructions

Make the dough

  • In a bowl, mix flour, salt and baking powder. Add water and olive oil. Mix until a soft dough forms.

Knead the dough

  • Knead the dough for about 5 minutes until smooth and elastic. Let it rest for 10 minutes.

Roll the dough

  • Roll dough on a floured surface into a thin sheet. This helps it cook evenly.

Cut into pieces

  • Cut the dough into small squares or rectangles using a knife or cutter.

Heat the oil

  • Heat oil in a deep pan over medium heat until hot for frying.

Fry the crescentine

  • Fry dough pieces in hot oil until golden and puffed. Turn them for even cooking.

Drain excess oil

  • Remove fried pieces and place on paper towels to remove extra oil.

Prepare Cunza

  • Mix olive oil, garlic, rosemary and salt in a small bowl.

Serve hot

  • Drizzle Cunza over warm crescentine or serve on the side. Enjoy fresh and crispy.

Notes

  • Do not roll dough too thick
  • Fry in small batches for best results
  • Use fresh rosemary for stronger flavor
  • Add parmesan cheese on top
  • Serve with cured meats or cheese
  • Bake instead of frying for lighter version
  • Add chili flakes for spice
