Ingredients
  

Noodles

  • 200 g sweet potato glass noodles dangmyeon

Vegetables

  • 1 carrot julienned
  • 1 onion sliced
  • 1 bell pepper sliced
  • 1 cup spinach
  • 4 –5 mushrooms sliced
  • 2 green onions chopped
  • Protein optional
  • 200 g beef strips or chicken
  • 1 egg for garnish, optional

Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon minced garlic
  • ½ teaspoon black pepper

Cooking

  • 2 tablespoons vegetable oil
  • Sesame seeds for garnish

Instructions
 

Cook the Noodles

  • Boil sweet potato noodles until soft. Drain and set aside.

Prepare Spinach

  • Blanch spinach in hot water for 30 seconds. Squeeze out water.

Cook the Meat

  • Stir-fry beef or chicken until fully cooked. Set aside.

Cook Vegetables Separately

  • Sauté carrots, onions, mushrooms and bell peppers one by one.

Make the Sauce

  • Mix soy sauce, sugar, sesame oil, garlic and black pepper in a bowl.

Combine Noodles

  • Add noodles into a large mixing bowl.

Add Ingredients

  • Add cooked vegetables, meat and spinach.

Pour Sauce

  • Add sauce over noodles and mix gently.

Stir-Fry Together

  • Lightly toss everything in a pan for 2–3 minutes.

Garnish and Serve

  • Top with sesame seeds and serve warm.

Notes

  • Do not overcook noodles to keep them chewy.
  • Cook vegetables separately for best texture.
  • Add mushrooms for extra umami flavor.
  • Use beef for traditional taste or tofu for vegetarian version.
  • Add chili flakes for spice.
  • Sesame oil should be added last for best aroma.
