Instructions

Prepare Oven and Tray

  • Preheat the oven to 180°C. Line a muffin tray with paper liners. Keep it ready.

Grate the Zucchini

  • Wash zucchini and grate it. Squeeze lightly to remove excess water but keep moisture.

Mix Dry Ingredients

  • In a bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk together.

Beat Eggs and Sugar

  • In another bowl, whisk eggs, brown sugar, and white sugar until smooth and slightly fluffy.

Add Oil and Vanilla

  • Pour oil and vanilla extract into the egg mixture. Mix until well combined.

Add Zucchini and Milk

  • Add grated zucchini and milk. Stir gently to combine with the wet mixture.

Combine Wet and Dry

  • Gradually add dry ingredients to wet mixture. Fold gently to avoid overmixing the batter.

Add Chocolate Chips

  • Add chocolate chips to the batter. Fold carefully to distribute evenly without breaking chips.

Fill Muffin Cups

  • Spoon batter into liners. Fill each about three-quarters full for proper rising.

Bake Muffins

  • Bake for 20–22 minutes. Test with a toothpick; it should come out clean or slightly melted with chocolate.

Cool Muffins

  • Remove muffins from oven. Let them cool for ten minutes before serving or storing.

Notes

  • Do not overmix batter for fluffy muffins.
  • Keep some chocolate chips aside to sprinkle on top.
  • Use whole wheat flour for healthier muffins.
  • Add chopped nuts for extra crunch.
  • Use dark chocolate chips for a richer flavor.
  • Replace milk with yogurt for creamier texture.
  • Freeze leftover muffins for up to two months.
