Ingredients
  

  • 2 pounds potatoes Yukon Gold or Russet, peeled and cut into cubes
  • 2 tablespoons butter
  • 2 medium onions thinly sliced
  • 1/2 cup milk or cream
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon olive oil optional, for faster caramelization

Instructions
 

Boil the Potatoes

  • Place peeled potato cubes in a pot. Cover with water. Add a pinch of salt. Boil until tender, about 15–20 minutes.

Caramelize the Onions

  • While potatoes cook, heat butter and olive oil in a frying pan over medium heat. Add onions and cook slowly, stirring often, for 15–20 minutes until golden brown and sweet.

Drain and Mash Potatoes

  • Drain cooked potatoes. Return to the pot. Mash with a potato masher until smooth.

Add Milk and Butter

  • Pour in milk or cream and 2 tablespoons butter. Mash again until creamy and fluffy. Adjust consistency as needed.

Mix in Caramelized Onions

  • Add the caramelized onions to the mashed potatoes. Stir gently until onions are evenly distributed.

Season and Serve

  • Add salt and black pepper to taste. Stir once more. Transfer to a serving dish and serve warm.
