Ingredients
  

  • 200 grams chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 cup shredded cabbage
  • 1 medium carrot julienned
  • 1 bell pepper thinly sliced
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • Salt to taste
  • Black pepper to taste
  • Optional cooked chicken or shrimp

Instructions
 

Boil the noodles

  • Boil water in a large pot. Add noodles. Cook until just tender. Drain well. Toss with little oil.

Prepare the sauce

  • In a small bowl, mix soy sauce, oyster sauce, sugar, and sesame oil. Stir well. Keep aside.

Heat the pan

  • Heat wok on medium-high heat. Add vegetable oil. Let it get hot but not smoky.

Sauté garlic

  • Add minced garlic to hot oil. Stir quickly for few seconds until fragrant. Do not burn garlic.

Cook vegetables

  • Add carrots, cabbage, and bell pepper. Stir-fry for two minutes. Vegetables should stay slightly crunchy.

Add protein option

  • If using chicken or shrimp, add now. Stir-fry until fully heated and coated with oil.

Add noodles

  • Add cooked noodles to the pan. Toss gently with vegetables. Use tongs or spoon carefully.

Pour the sauce

  • Pour prepared sauce over noodles. Toss well until noodles are evenly coated with sauce.

Season lightly

  • Add salt and black pepper to taste. Stir-fry for one minute. Taste and adjust seasoning.

Add green onions

  • Add chopped green onions. Toss once. Turn off heat. Do not overcook onions.

Final toss

  • Give everything a final gentle toss. Make sure noodles look glossy and evenly mixed.

Serve hot

  • Transfer chow mein to serving plates. Serve immediately while hot and fresh.
